I use the sea salt spray for the same thing! Good innit?
How do you do your hair though - with three products? Because personally I usually just go towel dry, sea salt spray, style/blowdry, then finish with wax or clay and that seems to work pretty well. And takes maybe five minutes, which is a bonus.
I do the exactly the same as you (towel dry > sea salt spray > hair dry > wax/clay) but then just fix it in place with the d:fi fixing spray. The spray is great, totally invisible and just gives that extra assurance that it stays in place on blustery days. It takes me about five minutes too and stays in place all day (I can even get away with it looking just as good for a second day if I'm feeling lazy).
I used to use a lot of VO5 Products as well, until I got a tester of the Ted Baker "Stuck in the mud." It smells great and is the best i've ever used for styling. I'm not sure if its available to buy although I think its exclusive to boots!
What does this sea salt spray do? Is it a holding hair spray?
You know when you go swimming in the sea, come out and dry off and your hair feels a bit rougher and textured? That's the effect. It gives you some control (don't know what it's like on dry hair, I use it towel dry) and volume, as well as the texture. It can be like surfer hair, or you can do what Jay and I do, and style a quiff with it. It's quite versatile.
